Homemade Brownie Mix


 OCD really likes it when ADD's interests coincide with decency and good order.  The homemade brownie mix is a good example.  The original recipe that I found here at Fake-It Frugal was great, but makes a 9x9 pan.

That's just not a good idea with four teenagers.  The youngest, the baker, tried to make it in a 13x9 pan as if somehow doing it in a bigger pan would make more servings.  The brownie crisps were nice, but crunchy.

Someone in the comments gave her instructions for doubling the dry recipe and shifting the wet ingredients, and I decided to try it and these were delicious.

Big(ger) Family Brownie Mix

Mix together with whisk:     2 cups sugar
                                         1 cup flour
                                         2/3 cup cocoa
                                         1/2 tsp salt
                                         1/2 tsp baking powder

Place into plastic bag with the following instructions written on it (I used a sharpie on dollar store freezer bags):    
               Add to mix -   3 eggs
                                    3/4 cup oil
                                    1/4 cup water
                                    2 tsp vanilla

               Bake @350 degrees for 25-30 minutes in a 13x9 pan.

I made up 4 in bags then mixed up and baked the fifth.  There's probably a way to mix the whole thing then calculate how much goes into each bag but the math was more daunting than ADD cared to deal with.  (OCD tried.  There were fractions.)  It seemed easier just to have all the ingredients out, measure, throw in, whisk, put in bag, then do the next round.

Definitely worth doing, saving a few pennies and packaging, not to mention no preservatives.
